Which reminds me. My hobby is fishing offshore. Here in Dumbutt that means about 30 miles out from the beach at Galveston. One the biggest and most fun fish to catch way out there are LING. It is somewhat like a cod, very good eating with perhaps the best fish to meat ratio. They are a curious species that often come right up to the boat to see what’s going on. They get up to about 100 pounds famous for breaking lines and bending hooks while mostly fighting on the surface, which is far more fun than staring at a line disappearing into the depths.

Only in Texas is this wonderful game fish known as a LING. The rest of the world calls them COBIA. You see the Shakespeare? COBIA is something you name a fast boat or a hot car. LING is something yellowish with a greenish tint that hangs out your nose.

There is also a name problem with a fish most people catch out at sea, what are called pelagic fish. Officially this species is called the DOLFINFISH, which in the US is shortened to DOLFIN.  Here again the rest of the world calls them DORADO while restaurants call them MAI MAI. You can already see the problem I am sure. DOLFIN is pronounce the same a the DOLPHIN Flipper. Using the word DOLFINFISH or DORADO does not relate to most anyone so forget those.

After returning from a fishing trip you invite your friends at work to come over for dinner for a DOLFIN feast you caught the other day. You have lots in the fryer because there is no limit on them.  Shakespeare again. Rather than long explanations or carrying a picture of the fish around with you, I have learned that it is best to default to the restaurant name MAI MAI and everyone understands. BTW, the small Mai Mai that school up are called SCHOOLIES int Florida and CHICKENS in Texas.
