After a life of never finding an acceptable frozen pizza or a pizza from a national chain, I chanced upon the answer to a great homemade pizza as good as that good local pizza place near you. The trick is the 10″ cast iron skillet you see pictured here which costs under $10. Do not oil and put the skillet on the oven rack second from the top, set BAKE at 450. Wait for the buzzer. Then switch the oven to BROIL, wait a few minutes and then slide your personally designed pizza onto the skillet. Check in 5 minutes. The same pan and process is also good for fajitas.
To make it fast and easy use either a large flour tortilla or pita bread and get one of those squeeze bottles of pizza sauce that lasts in your fridge condiment door for a few months. Oh, and just in case you were not aware, those individually wrapped string cheese sticks are made of low fat mozzarella.

For those of you who live where it’s cold and miserable I suppose I have to show you a picture of the key ingredient, RO*TEL Original Diced Tomatoes & Green Chilies at about a buck a can. Down here in Texas it is often found on pallets up front near the batteries and the National Enquirer. Measure out 2 ounces of dry pasta, I find elbow macaroni the easiest to deal with, and boil adente. Empty the can of RO*TEL into a bowl – do not drain – and microwave for 30 seconds. Drain pasta and stir into the bowl. A fill you up meal of only 240 calories that costs about $1.50.
By The Way, RO*TEL is famous for the nachos recipe, one can per pound of Velveeta, the water in the RO*TEL is just about right for consistency. If too hot, it does come mild and I think there are some other brands for wussies. Can I say wussies? Republicans say I can so what the Hell.
